De Waal and Paulette
The Cellar at Stonewall was built in 1828 and the De Waal family have been farming at Stonewall since 1873. It is widely thought that the Cellar may well be the oldest in the Cape winelands region.
De Waal Koch took over the running of the farm in 1984 and he sells around 90% of his grapes to Distell, South Africa's largest wine making company. 10% of his wonderful crops however, he keeps for his own production.
Such is his reputation with other winemakers that he is often asked to help ferment wine for other small vineyards. He is known for being willing to share both his time and experience.
The Estate and Wines
The farm is easy to identify from the road as you look across the small valley. It is the farm that is completely enclosed by a Stonewall! The wall separates the farm from the 75ha currently under vine. Cabernet Sauvignon, Cabernet/Merlot blend called Ruber, Chardonnay and Sauvignon Blanc are the principal varieties. De Waal produces around 2,500 cases (90% red, 10% white) each year for sale mainly locally and some into mainland Europe.
The cellar allows traditional fermentation using old concrete open vats, lined with wax and there is a more modern pneumatic bladder press to enable a gentle pressing of the grapes.
